Donna Hebson, a Lake Martin resident on Sandy Creek, says she decided to take the sourdough bread-baking class after buying sourdough loaves weekly from Market 34, a Lake Martin specialty store near her home. After she and her husband, retired Sylacauga pharmacist Tommy Hebson, ate the store-bought sourdough bread over months, they did not get hungry in the afternoons. The sourdough bread seemed to keep them satiated.

So, it was off to class at The Grand Bakery for Donna Hebson to learn how to bake sourdough bread.

At the end of her first class, she went home with a bowl of sourdough starter, ready to bake a loaf in her home oven. She also had a comprehensive list of health benefits of sourdough:

Digestion

The bacteria in sourdough, called lactobacillus, produces lactic acid that helps with digestion. The bacteria also pre-digest starches in the grains, which can reduce bloating and digestive discomfort.

Healthy Gut Bacteria

The fermentation process in sourdough increases the beneficial bacteria, which can support a healthy gut micropbiome.

Lower Blood Sugar Levels

Sourdough has a lower glycemic index (GI) than regular bread, so it causes blood sugar to rise gradually. This can help maintain steady energy levels throughout the day.

Absorption of Minerals

The fermentation process in sourdough neutralizes phytic acid, which is an anti-nutrient that can make it difficult for the body to absorb minerals like iron, zing, and calcium.

The list of claimed health benefits helps explain why the Hebson couple generally felt better after substituting sourdough bread for commercial loaves of bread. As it turned out, it was not just a culinary class, it was also a dietary class, focused on sourdough bread.

The class also taught sourdough pancakes.

Cookies baked in-house include butter pecan, chocolate chip, M&M, snickerdoodle, sugar, oatmeal raisin, lemon, plain oatmeal and cookie monster cookies.

In-house cakes include pound cakes, wedding cakes, chocolate cakes, birthday and special occasion cakes.

Breakfast items include blueberry, chocolate chip, good morning muffins, coffee cake and nut muffins—sourdough cinnamon rolls.
